Apothik fighting 135-year-old issue for expansion
Easement issue holds up plans, along with food truck
The Apothik Food Truck is gaining in popularity, but expansion on the brand name has hit a 135-year-old dead end.
Maria Norberg, who owns both the new Apothik Food Truck and Grounded Specialty Coffee – both can be found on/near the corner of Third and Main – had intended to expand into a full service restaurant on the long-vacant there, only to recently find out about an unresolved easement problem with another building that dates back to 1880. So, she cannot start the building project she initially intended at the site.
Norberg is asking the city council to put the building permit, liquor license and everything else on hold for a few months until she can get the problem worked out. So, the food truck could be the only thing that carries the Apothik name for awhile.
If the easement issue does go through, Norberg intends to rename the entire facility – the coffee shop and new expansion – Apothik, a sort of play on words as there used to be an apothecary drug store in that location, “years and years and years ago,” she said. She also added she’d be keeping the truck.
